These can also be frozen into small dough balls, and taken out to bake a few at a time instead of baking one large batch.
Diabetic-Friendly Lactation Cookies
INGREDIENTS:
– 2 Tb flax seed meal – 1/4 cup water – 1 cup butter – 2/3 cup Splenda granulated – 2/3 cup Truvia brown sugar – 2 eggs – 1 tsp vanilla – 2 cups flour – 1/3 cup brewer’s yeast – 1 tsp cinnamon – 1 tsp baking soda – 1 tsp salt – 3 cups oats – 1 cup dark chocolate chunks
DIRECTIONS:
Mix flaxseed & water, let sit for 5 minutes. Beat butter & sugars. Add eggs & beat well. Add flaxseed mix and vanilla. Sift together flour, brewer’s yeast, baking soda and salt. Add dry ingredients to butter mix. Stir in oats and chocolate chunks. Chill dough for 30+ minutes. Scoop onto baking sheet – bake at 350* for 14 minutes.
